Ahhh… the big meal is done, and now to deal with all of those leftovers! To me, I almost like the Thanksgiving leftovers more than I like Thanksgiving dinner! These turkey sandwiches use leftover cranberry sauce, leftover cornbread and sausage stuffing and of course, the star of the sandwich, the juicy and delicious leftover turkey.
On TV, jeff Marrow might be the Sandwich King, but in our family the Sandwich King is DJ. This is his favorite way of making a leftover Thanksgiving Turkey Sandwich. It uses all of his favorite parts of Thanksgiving dinner in one delicious bite! If you’re following my November Menu, this recipe is included in the menu plan, and the groceries for the leftovers are included in the Thanksgiving Grocery List. We ended up buying dark pumpernickel bread instead of traditional whole wheat like in the menu and grocery list. The pumpernickel takes this sandwich to a whole new level. Spend the extra $1 and go for this bread if you can!
Ingredients:
per sandwich
2 slices dark pumpernickel bread
butter
leftover cranberry sauce
about 1 cup shredded leftover turkey
about 1/3 cup leftover cornbread and sausage stuffing
Directions:
Toast and butter bread. Spread one piece of pumpernickel with cranberry sauce.
Place turkey on other slice of bread, and then top turkey with stuffing.
Top sandwich with other slice of bread, cut on an angle and serve.
