Steak Fajita Nachos

Steak Fajitas + Nachos = Deliciousness! This fun spin on Nachos is a crowd pleaser, and is easy to make for 1 or 100 people!

I love Nachos. They are always a go-to when I want a snack, or just can’t think of what to make for dinner. I like that everyone can customize their Nachos they way they want, and how easy they are to make, and clean up!

I used steak to make my Nachos because that’s what I had on hand.  Fajita Nachos can also be made with chicken or shrimp.  If you use chicken, be sure to cook it first.

How To Make Steak Fajita Nachos

Gather & Prep Ingredients 
Marinate steak and veggies for at least 15 minutes before cooking.  If you have the time, marinate the steak overnight! While the steak is marinating, line a baking sheet with parchment or foil, and spread tortilla chips in a single layer.  Top with a layer of shredded cheese.  After steak has marinated for a little bit, spread it in a single layer across the top of the cheese.

Cook Nachos 
In a preheated 400 degree oven, bake for 10-15 minutes, until cheese is melted and bubbly, steak is cooked to desired doneness (about medium at this temp and time), and veggies are tender.

Serve 
We served ours with some fresh Guacamole and Salsa, but you can serve your Steak Fajita Nachos with whatever condiments you like on your fajitas.  Other great toppings and condiments include: sour cream, cilantro, queso fresco, diced tomatoes, lettuce or even refried beans.

 12 oz steak (ribeye, flank or hanger), thinly sliced
 1 green pepper, thinly sliced
 ½ red pepper, thinly sliced
 1 onion, thinly sliced
 ¼ cup taco seasoning
 3 tbsp olive oil
 1 lime, juiced and zested
 ½ bag restaurant style tortilla chips
 2 cups shredded mexican cheese blend
 guacamole, salsa or sour cream

Preheat oven to 400 degrees.

In a large bowl, toss together steak, pepper, onions, taco seasoning, olive oil, lime juice and lime zest. Let marinate for 15 minutes to overnight.

Spread tortillas in a single layer on a baking sheet lined with foil or parchment and top with shredded cheese. Top cheese with steak, peppers and onions in a single layer.

Bake for 10-15 minutes, or until cheese is melted and bubbly, steak reaches desired doneness, and veggies are tender.

Serve topped with favorite condiments.
