We are gearing up for Thanksgiving in our house, and these Spiralized Carrots were a huge hit with a fun twist on a classic – Honey Roasted Carrots.
Now, I know that this isn’t the prettiest picture, but boy oh boy are they delicious! I’m not sure if it’s just me or not, but I feel as soon as November hits, I am inspired to cook everything and to cook everything fall! We eat carrots all year long, in so many different ways, and honey roasted are one of our favs! I have been LOVING my new spiralizer. I got this little guy from Williams-Sonoma. And let me tell you what, it’s pretty damn cool! This one has four (4) different blades for angel-hair shredder, chipper, fine shredder and straight blade, plus a pin accessory to use with the blades to create accordion cuts (this is the one for curly fries).
I love using rainbow carrots – they are so much sweeter than the regular ‘ol orange carrots we see at the grocery store, and they are only about 50 cents to $1 more. Plus, they look so pretty, so put a new spin on your carrots this Thanksgiving and spiralize them!
2 lbs rainbow carrots
1/4 cup melted butter
3 tbsp honey
1 tbsp brown sugar
salt and pepper
Preheat oven to 425 degrees.
Peel and spiralize carrots using the chipper blade
In the bowl you melted the butter in, stir in honey, brown sugar, salt and pepper.
Toss spiralized carrots with honey/butter mixture.
Place in a single layer on a baking sheet. Cook 15-20 minutes, tossing once.
