Sometimes the simplest things are the best, and Grilled Zucchini doesn’t get any simpler! With only THREE ingredients, this recipe is perfect every time and accompanies any and all summer grilling perfectly!
Zucchini without a doubt is my absolute favorite vegetable. I could (and almost do) eat it every day, and since it’s so versatile, I never get bored of it, but this simple grilled zucchini is my favorite way of all to have it!
There are so many different ways that you can season zucchini like; lemon-pepper, herb and garlic, Mexican inspired, Asian inspired or one of my favorites, Montreal Steak Spice… the possibilities are endless and if you stick to a seasoning mix that you used in another part of your meal, you’ll have a winner every time.
Not only are there a lot of ways to season your grilled zucchini, but there are a ton different ways to cut it too. I like slicing my zucchini into planks. I feel like they cook a little more evenly this way, but if you prefer, you can slice the zucchini into rounds, or even into wedges. No matter how you slice it (pun intended), your Grilled Zucchini will turn out great!
To cut the zucchini into planks, like in this recipe, start by cutting the zucchini in half so you have two equal size pieces to work with. Keeping the zucchini vertical, cut down, making 3 equally sized pieces. Some might be a little thinner than others, but try to make them as even as possible – this just makes cooking easier.
2-3 zucchini (depending on size), sliced into planks
1 tbsp fresh garlic
2 tbsp Italian seasoning mix (salt, pepper, parsley, basil)
Preheat grill to around 400 degrees.
Season and place zucchini on grates, and cook on each side for 5 minutes, until soft and fork tender. Transfer cooked zucchini to the top rack to finish cooking and stay warm for another 5 minutes or so while you finish the rest of your meal. You can leave the zucchini up here longer if you need to.
Remove from heat and serve right away.
