The Best Reuben Sandwich You’ve Ever Had + Keto Reuben Sandwich Recipe

There is nothing quite like a Reuben Sandwich on St. Patrick’s Day!  I mean how can you go wrong with corned beef, tangy sauerkraut, and swiss cheese layered between swirled rye bread and cooked like a grilled cheese in butter?  If I see a Reuben Sandwich on a menu, 9 out of 10 times I am going to order it!

This post shows you how to make a traditional Reuben Sandwich on rye bread, as well as a Keto Reuben Sandwich on a Homemade Chaffle.  I originally shared this recipe back in 2016, and since then have made many Reuben’s, perfecting the recipe!  To make the BEST Reuben Sandwich that you’ve ever had, it starts with really good homemade Corned Beef.  Use your slow cooker to make the Corned Beef.  This is best done a day ahead of time, so that you can get the best slice on the Corned Beef.  Traditionally, a Reuben Sandwich is made with thousand island or russian dressing layered between the corned beef, cheese and sauerkraut, but we make ours with spicy brown mustard.  Weird, I know.  But, hubby started making them this way because one year, they ran out of thousand island dressing, and my Father-In-Law wasn’t going to the store, so he just used the next best thing, and personally, I think it’s 1000 times better than the traditional way!  If you’re a spicy brown mustard fan, give it a try!

How To Make A Reuben Sandwich

Making a Reuben Sandwich is easy.  Start by gathering your ingredients.  For each sandwich you’ll need:

  • sliced corned beef – use as much or as little as you want
  • 2 slices swirled rye bread
  • 3 slices baby swiss cheese
  • 3 tbsp sauerkraut
  • 2 tbsp thousand island or russian dressing or spicy brown mustard
  • butter

Once you have gathered all of your ingredients, it’s time to start assembling the sandwiches.  Just like if you were going to make a grilled cheese sandwich, start by buttering each slice of rye bread.  With buttered sides down, add a slice and a half of cheese to each piece of bread.

Next, add a thick layer of sliced corned beef on one slice of bread.

Next, top the corned beef with sauerkraut and thousand island or russian dressing.

Carefully place second slice of bread on top of sandwich, butter side up.  Place a non-stick pan over medium-low heat and add 1 tbsp butter to pan.  When butter is completely melted, add sandwich to pan.  Cover with a pot lid, and cook for 4 minutes.

Remove lid, increase heat to medium, and flip sandwich.  Cook another 3-4 minutes on the other side until bread is crispy and cheese melted.

Remove Reuben Sandwich from pan and let cool for 2 minutes.  Slice in half and serve with a pickle and some (homemade) potato chips.

How To Make Keto Reuben Sandwiches

Making your Reuben Sandwich Keto is actually pretty easy.  It really just comes down to swapping out the rye bread with swiss chaffles.  If you’re wondering what a chaffle is, it’s a Keto Cheese Waffle, and they are really, really good.

Swiss Cheese Chaffles

This recipe makes 2 waffles in my Dash Waffle Maker.  This little guy cost me $10 on Amazon, and is honestly the best waffle maker I’ve ever used.  The size is perfect for sandwiches, or for making waffles for kids!

Ingredients:

½ c shredded swiss cheese (or mozzarella)
1 tbsp cream cheese
1 egg
2 tbsp almond flour
¼ tsp baking soda
non-stick cooking spray or melted butter

Directions:

Preheat waffle maker.

Place cream cheese in a medium-size microwave safe bowl, and microwave for 10 seconds to melt.  Stir in shredded swiss, then egg, and then baking soda and almond flour.  Stir until well combined.

Spray waffle maker with non-stick spray or brush with melted butter and add ¼ cup batter (for mini waffle maker) and close lid.  Cook until browned and crispy – about 4 minutes.  Remove, and keep warm in the oven while you cook the remaining waffles.

Once all of the Chaffles are made, assemble the Keto Reuben Sandwiches like you would a traditional sandwich, starting with a layer of cheese, then corned beef, then sauerkraut and thousand island dressing and top it with the second chaffle.  Since the chaffles can be difficult to butter, add 3 tbsp of butter to the pan when cooking, instead of buttering each individual chaffle.  Once Keto Reuben Sandwiches are cooked, let cool for 2 minutes, and slice and enjoy with a pickle.
