Sesame Chicken

 1 lb boneless, skinless chicken breast
 1 cup cornstarch
 ½ cup all-purpose flour
 2 tbsp soy sauce
 1 tsp white pepper
 2 egg whites
 ¼ tsp baking soda
 1 cup chicken stock
 ½ cup soy sauce
  cup brown sugar, packed
 1 tbsp cornstarch
 3 tbsp sesame oil
 ¼ cup rice vinegar
 2 tsp sirarcha, optional
 1 ½ tbsp garlic, minced
 vegetable oil, for frying
 sliced green onions, for garnish
 sesame seeds, for garnish

In a small pot, heat sesame oil until shimmering. Add garlic and cook 30 seconds. Add remaining ingredients, stir to combine and let simmer over low heat 10 minutes. Remove from heat and let cool.

In a separate skillet, heat 2-3” of frying oil to 375 degrees.

To make chicken, mix all ingredients in a large bowl. Lumps are ok. Dredge chicken in batter. Working in batches, cook chicken for 4-6 minutes, or until it reaches an internal temperature of 165 degrees.

Transfer cooked chicken to a plate lined with paper towel to drain.

Toss chicken with sauce and serve over rice topped with sesame seeds and green onions.
