Sausage Balls & Maple Mustard Dip

For Sausage Balls
 1 lb ground breakfast sausage
 1 ¾ cups prepared pancake mix (Bisquick)
 2 cups cheddar cheese, shredded
 1 tbsp dijon mustard
 1 tsp salt
 ½ tsp black pepper
 1 tsp paprika
 2 tbsp olive oil
For Dipping Sauce
 3 tbsp maple syrup
 2 tbsp dijon mustard
 1 tsp olive oil
 1 tsp salt
 ½ tsp black pepper
 1 tsp crushed red pepper flakes, optional

Preheat oven to 375 degrees. Line a sheet pan with parchment paper or foil.

Prepare dipping sauce by combining all ingredients together in a small bowl, and whisking until smooth. Set aside.

In a large bowl, combine sausage, pancake mix, cheese and spices with hands until well combined. Measure 1 tablespoon and roll into balls, and place in a single layer on prepared sheet pan.

Brush Sausage Balls with olive oil, and bake for 15-20 minutes, until no longer pink.

Serve with Maple Mustard Dipping Sauce.
