Preheat oven to 400 degrees
Line a quarter baking sheet with foil and spray with non-stick spray. Place saltine crackers in a single layer on prepared baking sheet.
In a small pot bring butter, sugar and vanilla to a boil. Whisk constantly and cook for 3 minutes. Remove from heat and pour over saltines. Spread evenly over the top.
Bake for 5 minutes. Remove from oven and let cool 5 minutes.
Microwave chocolate chips in 30 second increments until full melted. Don’t over melt. Pour chocolate over caramel and spread evenly.
Top evenly with your favorite toppings. If adding melted white chocolate, wait for melted chocolate to completely cool first before adding.
Let cool completely. Break into small-ish pieces and enjoy!
