Butter each slice of rye bread. With buttered sides down, add a slice and a half of cheese to each piece of bread.
Next, add a thick layer of sliced corned beef on one slice of bread.
Top the corned beef with sauerkraut and thousand island or russian dressing.
Carefully place second slice of bread on top of sandwich, butter side up. Place a non-stick pan over medium-low heat and add 1 tbsp butter to pan. When butter is completely melted, add sandwich to pan. Cover with a pot lid, and cook for 4 minutes.
Remove lid, increase heat to medium, and flip sandwich. Cook another 3-4 minutes on the other side until bread is crispy and cheese melted.
Remove Reuben Sandwich from pan and let cool for 2 minutes. Slice in half and serve with a pickle and some (homemade) potato chips.
