Lemon, Parmesan & Garlic Roasted Potatoes

 2 lbs baby potatoes, quartered
 ½ stick butter, melted
 2 tbsp olive oil
 4 tbsp fresh minced parsley, divided
 3 tbsp garlic, minced
 1 tbsp salt
 ½ tbsp black pepper
 2 tsp paprika
  cup finely grated parmesan cheese
 1 lemon, juiced and zested (2 tbsp juice)

Preheat oven to 400 degrees. Line a baking sheet with foil and set aside.

In a microwave safe bowl, microwave butter until melted. Stir in garlic, 2 tbsp parsley, spices, and olive oil.

Toss potatoes with melted butter mixture and spread in a single layer on prepared baking sheet. Evenly sprinkle parmesan cheese over the top, and toss to combine.

Bake for 25 minutes. Toss, return to oven and bake an additional 20 minutes.

Remove from oven and toss potatoes with lemon juice and lemon zest. Serve, topped with remaining parsley and an extra sprinkle of parmesan cheese over the top.
