Preheat broiler to 500 degrees.
In a small bowl, whisk together lemon juice, olive oil, parsley, garlic, salt, pepper and dijon mustard. Set aside.
Place salmon, skin side down on sheet pan. Season with a pinch of salt and crack of fresh black pepper.
Thinly slice zucchini, and fresnos (if using), and spread out in a single layer on baking sheet, around salmon. Place a slice of lemon on top of each filet.
Drizzle ¾ of lemon-garlic sauce over salmon and zucchini, saving the rest for serving.
Broil for 5-6 minutes. Remove from oven and serve immediately with extra lemon-garlic sauce, if desired.
