Preheat waffle maker.
Place cream cheese in a medium-size microwave safe bowl, and microwave for 10 seconds to melt. Stir in shredded swiss, then egg, and then baking soda and almond flour. Stir until well combined.
Spray waffle maker with non-stick spray or brush with melted butter and add ¼ cup batter (for mini waffle maker) and close lid. Cook until browned and crispy - about 4 minutes. Remove, and keep warm in the oven while you cook the remaining waffles.
Place a slice of cheese on each chaffle.
Next, add a thick layer of sliced corned beef on one chaffle.
Top the corned beef with sauerkraut and russian dressing or spicy brown mustard.
Carefully place second chaffle on top of sandwich, butter side up. Place a non-stick pan over medium-low heat and add 3 tbsp butter to pan. When butter is completely melted, add sandwich to pan. Cover with a pot lid, and cook for 4 minutes.
Remove lid, increase heat to medium, and flip sandwich. Cook another 3-4 minutes on the other side until chaffle is crispy and cheese melted.
Remove Keto Reuben Sandwich from pan and let cool for 2 minutes. Slice in half and serve with a pickle and some (homemade) potato chips.
