Chicken Parm Lasagna Rolls

 1 box lasagna noodles, cooked
 2 cups spaghetti sauce
 2 cups shredded mozzarella cheese
For Cheese Filling
 1 32 oz whole milk ricotta cheese
 1 16 oz shredded italian cheese mix
 ¼ cup finely grated parmesan cheese
 1 egg
 2 tbsp fresh parsley, minced
 2 tbsp fresh basil, minced
For Chicken
 1 lb chicken breast
 1 cup italian salad dressing
 1 ½ cups flour
 3 tsp salt, divided
 1 ½ tsp black pepper, divided
 3 tsp garlic powder, divided
 3 eggs
 1 tbsp cream
 2 cups bread crumbs
 ½ cup panko bread crumbs
 ½ cup finely grated parmesan cheese

Preheat oven to 375 degrees.

Bring a large pot of salted water to a boil and cook lasagna noodles according to package directions. Drain and set aside.

For Cheese Mixture

In a large bowl, combine all ingredients for cheese mixture until well combined.

For Chicken

Dice chicken into 1" pieces, and place in a large bowl with italian dressing. Let marinate at least 30 minutes.

Set up a breading station with three small bowls for flour, eggs and breadcrumbs/parmesan cheese. Add 1 tsp each of salt and garlic powder to each bowl, and ½ tsp black pepper to each bowl.

Working in batches, dredge chicken in flour, then egg, and then breadcrumb/parmesan mixture.

In a large skillet, over medium-high heat, add 2 tbsp oil, and heat until shimmering. Again, working in batches, cook chicken 2-3 minutes per side - until browned. The chicken will NOT be cooked through. It will continue cooking in the oven. Set cooked chicken on a plate to cool while you prepare everything else. 

How To Cook In Air Fryer: Place prepared chicken in a single layer in basket, and spray with olive-oil spray. Preheat Air Fryer to 385 degrees and cook for 5 minutes. 

To Assemble

Lay a cooked noodle on a flat surface and spread 1-2 tbsp cheese filling across noodle with a spoon, leaving about ¼" at one end without cheese.

Put one piece of chicken on cheese, and gently roll noodle towards the un-cheesed side.

Place seam side down in a baking dish or on a quarter sheet-pan. Repeat with remaining chicken and lasagna noodles. Pour 1 tbsp Spaghetti Sauce over the top of each lasagna roll, and top with shredded mozzarella cheese.

Bake for 8-10 minutes or until cheese is melted and bubbly. Serve immediately with extra Spaghetti Sauce and freshly grated parmesan cheese.
