Cheeseburger Macaroni

 1 lb ground beef
 1 lb elbow macaroni, mini shells or radiatore pasta
 1 onion, minced
 1 tbsp garlic, minced
 2 ½ cups milk
 1 ½ cups cheddar cheese, shredded
 1 ½ cups american cheese, shredded
 2 tbsp butter
 3 tbsp flour
 4 tsp salt
 2 tsp black pepper
 2 tsp paprika
 1 tbsp olive oil

Cook pasta according to package directions in salted water.  Drain and set aside.

In a large, deep skillet over medium-high heat, add a tablespoon of olive oil and heat until shimmering.  Add onions, and season with salt, pepper and paprika.

Once they have started to soften and turn translucent, add ground beef to pan.  Season with more salt, pepper and paprika.  Cook, breaking up the ground beef, until no longer pink - about 8-10 minutes.

In the same skillet, add 2 tablespoons of butter and heat until shimmering.  Whisk in 3 tablespoons of flour, and cook 1 minute.  Whisk in milk/cream and keep whisking until smooth.

Reduce heat to low, and whisk in cream cheese and stir until fully melted.  Stir in American and cheddar cheeses, and keep stirring until fully melted.

Add drained pasta to pan, and stir to fully combine.  Let cook 1 minute to warm pasta through.

Serve Cheeseburger Macaroni immediately, and enjoy!
