Ahhh… Football season is finally here! Last week, gearing up for the first Thursday night, and Sunday football games, I shared a couple of my favorite game day recipes – buffalo chicken tenders and chili. To keep up with sharing game day snacks, I present you with Bacon Wrapped Jalapeño Poppers.
In our home, Sundays are spent in front of the tv watching football, eating good food and drinking good beer – ALL DAY LONG. Bacon Wrapped Jalepeño Poppers are one of my go-to recipes because they are super easy and quick to make – done from start to finish in about 30 minutes, and 9 times out of 10, I have all the ingredients that I need in my fridge and pantry already.
I made these for dinner last Thursday, when we ate appetizers for dinner, and watched the first regular season game of the season! We used turkey bacon, because I cannot have regular bacon – wahhhhhh =(. I suggest using normal, pork bacon when making these, as they add just a completely whole new layer of flavor and really, who doesn’t love bacon? But, the turkey bacon was pretty darn good. It got nice and crispy in the oven, and wrapped around the jalapeños very well.
12 medium jalapeños
1/2 block cream cheese, softened
1/2 cup shredded Mexican cheese
1 tsp each; cumin, garlic salt, chile powder
1/2 tsp each; black pepper, paprika, cayenne
pinch red pepper flakes
24 slices bacon, we used turkey bacon
Preheat oven to 425 degrees. Prepare a baking sheet by lining it with parchment paper.
Remove stems from jalapeños, slice lengthwise and remove seeds. Bake for 5 minutes, just to soften up a little.
Meanwhile, in a small bowl, mix cream cheese, shredded cheese, and spices. until well combined.
Fill softened jalapeños evenly with the cheese mixture.
Once filled, wrap each jalapeño in a slice of bacon, and place seam side down on the same baking sheet.
Bake for 15 minutes, or until the bacon is crispy and the jalapeño is soft. The cheese may ooze out a little, and that’s ok. Once the jalapeño poppers are cool enough to touch, just stuff the cheese back in.
