Parmesan Garlic Roasted Cauliflower

Cauliflower is delicious!  There are so many different ways to cook it, and it can take on so many different flavors, but this Parmesan Garlic Roasted Cauliflower is my favorite! It is quick and easy to put together, and even picky eaters will be asking for seconds!

We had Friendsgiving last weekend, and I served this recipe. I used both white and purple cauliflower to make it. They both have the same taste, but the purple cauliflower just added a little extra color to the table!  I was asked by two different people how I made the cauliflower so purple, and I just simply told them it wasn’t me, it was Mother Nature!

To make the Parmesan Garlic Roasted Cauliflower, I added the olive oil, parsley, salt and pepper, garlic, parmesan cheese and melted butter to a large ziplock bag, added the cauliflower florets and tossed it together.  I did this a couple days ahead of time so that on Friendsgiving (Thanksgiving) Day, I just had to quickly toss it one more time and pour it onto a sheet pan. If you’re not preparing in advance, just toss it all together in a large bowl, and pour it on to the sheet pan.

Through trial and error, I have learned that to make sure that the cauliflower is crisp, it needs to be in a single layer.  I’ve also learned that by adding extra parmesan cheese over the top before serving makes it even better! Although I forgot to do this for the picture…🤦🏻‍♀️

Make sure that you use real parmesan cheese in this recipe.  So not the stuff in the shaker bottle, but a wedge, or a container of pre-shredded cheese from the deli.

If you’re running short on time, cook cauliflower in boiling salted water for 3 minutes.  Drain, and then toss with other ingredients. Increase the oven temperature to 425, and cook for 15 minutes.

 1 head cauliflower, cut into florets
 2 tbsp garlic, minced
 2 tbsp parsley, minced
 1 cup parmesan cheese, finely grated
 3 tbsp butter, melted
 2 tbsp olive oil
 1 tsp salt
 1 tsp black pepper

Preheat oven to 400 degrees.

In a large bowl combine all ingredients except cauliflower and mix until well combined. Add cauliflower to bowl, and toss to completely coat.

Pour in a single layer on a sheet pan and bake for 30-35 minutes or until crispy and fork tender.

Serve, topped with extra parmesan cheese.
