If there was ever that one recipe that doesn’t even quite make it onto a plate, these Oatmeal Chocolate Chip Cookie Bars are it.
These cookie bars are, in my humble opinion, best eaten just slightly under done, so that they are still ooey-gooey with a nice hot cup of coffee!
The first time I had these Oatmeal Chocolate Chip Cookie Bars was at my friend Becky’s house. Becky is probably the BEST baker on earth (maybe second to her Mom), and everything she makes is absolutely delicious. When I had these, I knew that I had to re-create them at home. I didn’t think that mine would be as good as Becky’s, but, I’m not gonna lie… they are pretty damn awesome! Go ahead and preheat your oven to 350 degrees now, and you might even want to make two batches… one for just you, and one to share.
What makes my bars a little different from Becky’s is the addition of Nutella. I LOVE, LOVE, LOVE, LOVE, LOVE Nutella. Like, eat it out of the jar with the spoon, LOVE Nutella. Yum! I had just a little bit left in the jar, so I tossed it in the microwave to melt it, and added it to the middle layer of these bars with the chocolate chips for even more melty-chocolatey goodness!
So not only are these soooooo good, but they are really easy to make. Just cream together the butter and sugars until they are light and fluffy, stir in the other ingredients, dump half in a layered pan, top with chocolate chips and Nutella, dump the other half on top and bake it. The hardest part of this recipe is anxiously waiting for it to cool down enough to eat it!
If you’re not feeling classic Chocolate Chip Cookies, switch it up, and add 1 tsp cinnamon to the batter, and add in raisins instead of chocolate chips – or have both! If you want some crunch, add some nuts. Or switch up the milk chocolate for dark chocolate, or white chocolate, or caramel, or add in toffee pieces (note to self… add heath pieces to grocery list).
Since I had these at Beckys when we got back from Florida, so what, two weeks ago, I have made them 3 times. So, 4 times in total (because she’s an amazing friend and sent me home with a big plate full), in about 2.5 – 3 weeks… they are really that good. And they have oatmeal in them, so they are healthy… right? That’s my story, and I’m sticking to it!
Here’s how you make this classic recipe:
Oatmeal Chocolate Chip Cookie Bars
2 sticks (1 cup) butter, softened
1 cup firmly packed brown sugar
1/2 cup white sugar
2 large eggs
2 tsp vanilla extract
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 1/2 cups all purpose flour
2 cups rolled (old-fashioned) oats
2 cups chocolate chips, divided
1/3 cup Nutella, melted
Preheat oven to 350 degrees. Grease a 9×9 baking pan with baking spray.
In the bowl of a stand mixer, or with a hand-held beater, beat butter, brown sugar and white sugar until light and fluffy – 3-4 minutes.
Add in eggs, one at a time, mixing well after each addition. Add in vanilla.
Add in salt, baking soda, baking powder, flour, rolled oats and 1 cup chocolate chips. Gently stir by hand to combine.
Spread 1/2 of batter into prepared pan, and with damp hands, press into an even layer.
Top with remaining chocolate chips and evenly drizzle melted Nutella over chocolate chips.
Carefully top with remaining batter, pressing into an even layer, covering chocolate chips and Nutella.
Bake for 27-30 minutes.
Let cool in pan for 5 minutes before cutting into bars.
