Ok, I’ll admit it, I have fallen victim to this whole Cauliflower Craze, and this recipe for Loaded Cauliflower Casserole is my new favorite way to eat cauliflower!
Cauliflower is growing on my boys, and this recipe was a huge hit with them too! Win-win! I’m not even sure they thought it was cauliflower – this casserole has all of the flavors of a loaded baked potato without all of the carbs! I am not by any means saying that this recipe is healthy for you… because I’m not really sure that it is. But… it’s delicious, and that’s all that really counts in the end!
Making this casserole is just like making other cream soup based casserole – mix the main ingredient with some creamed soup, sour cream and cheese, top with with something crunchy and Bob’s your uncle! But it really is an easy recipe to put together, and can be made ahead of time. Just keep the crispy topping separate until you’re ready to bake it.
It’s even a great casserole to prep ahead of time, and freeze to make a freezer meal. If you make this recipe into a freezer meal, add 30 minutes of covered cooking time. Again, keep the topping separate until you’re ready to bake.
Loaded Cauliflower Casserole
1 large head cauliflower, cut into florets
1, 10.5 oz can cream of mushroom soup (I like Pacific Foods brand)
2 tbsp sour cream
2 tbsp cream or milk
1 1/2 cups shredded cheddar
3 green onions, thinly sliced
6 strips bacon, cooked and crumbled
1 cup panko bread crumbs
2 tsp salt, divided
1 tsp each; black pepper and garlic, divided
Preheat oven to 350 degrees.
Steam cauliflower florets until tender – about 5 minutes.
In a large bowl, gently stir steamed cauliflower, cream of mushroom soup, sour cream, cream, 1/2 cup cheddar cheese, white parts of green onions, 1 tsp salt and 1/2 tsp each black pepper and garlic powder well combined.
In a small bowl, mix together 1 cup shredded cheese, panko, green parts of green onions, bacon, 1 tsp salt and 1/2 tsp black pepper and garlic powder.
Pour cauliflower mixture into a 9”x9” baking dish and top with panko and cheese mixture.
Cover with foil and bake 15 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bread crumbs are browned.
