Lemon, Parmesan & Garlic Roasted Potatoes

These buttery Lemon, Parmesan & Garlic Roasted Potatoes are crispy on the outside, and light and fluffy on the inside.  They are so flavorful and make the perfect addition to any weeknight or holiday meal!

We love roasted potatoes!  Who doesn’t? So as I was planning for Easter this year, I wanted to include a roasted potato recipe.  Roasted Potatoes are so easy to make, they go well with almost any dish, and everyone loves them.  In the past, I have shared our go-to Parmesan & Herb Roasted Potatoes, and this recipe combines the flavors of those potatoes with fresh lemon and parsley for a bright, springy twist, that makes these a perfect side dish for any Easter main.  My boys couldn’t get enough of these potatoes.  Usually, I have enough leftover for hashbrowns the next morning for breakfast, but they devoured these!

To keep with the Easter theme, I used a combination of red, purple and white baby potatoes.  When roasting potatoes, I love using baby potatoes.  They keep their shape, get a crispy outside, and have a creamy texture inside. If you can’t find a mix of potatoes, try to find red potatoes.  They just work best for roasting, and look pretty!

This is another recipe that your kids can help you prepare.  If you prep the potatoes, they can probably do the rest!  I love recipes where I can get Anthony in the kitchen with me helping out!  He loves it too.  With all of this extra time off, I have been making a lot more recipes that Anthony can help me with.

How To Make Lemon, Parmesan & Garlic Roasted Potatoes

Preheat Oven
Preheat oven to 400 degrees. Line a baking sheet with foil and set aside.

Make Butter Sauce 
In a large, microwave safe bowl, melt butter.  Mix in garlic, 2 tbsp parsley, 1 tbsp parmesan cheese, spices and olive oil until combined.

Season Potatoes 
Toss potatoes with butter sauce, and spread in a single layer on a baking sheet.  Sprinkle ⅓ cup finely grated parmesan cheese over the top, and toss to coat the potatoes.

Bake
Bake potatoes for 25 minutes.  Toss, and bake another 20 minutes, or until the potatoes are fork tender.

Toss Potatoes 
Toss potatoes with lemon juice, zest and remaining parsley.  Serve immediately, topped with a little extra freshly grated parmesan cheese.

 2 lbs baby potatoes, quartered
 ½ stick butter, melted
 2 tbsp olive oil
 4 tbsp fresh minced parsley, divided

 ½ tbsp black pepper
 2 tsp paprika
  cup finely grated parmesan cheese
 1 lemon, juiced and zested (2 tbsp juice)
