Here’s an easy recipe for Sheet Pan Lemon Garlic Salmon & Zucchini that is prepared and cooked in about 10 minutes! This low-carb, Keto meal is quick, easy, full of flavor and is cooked all in one pan.

This Sheet Pan Lemon Garlic Salmon really couldn’t get any easier. With about 5 minutes of prep, 5 minutes of cook time, and only one dish to clean, it really is the perfect weeknight meal.  But, what really makes this dish shine is the lemon garlic sauce.

I always use fresh lemons when cooking, but trying to squeeze them with your hands can be difficult, give you lots of seeds, and still leave a lot of juice in the lemon.  Having a good Lemon Squeezer makes all the difference when cooking with fresh lemons.  So, when Zulay Kitchen sent me a Lemon/Lime Squeezer to try*, I went right to the store, and stocked up on citrus!

Gather Ingredients

Gather your ingredients and anything else you may need to make dinner, like your lemon squeezer, a small bowl, and a small whisk.

10 Minute Lemon Garlic Salmon

Make Lemon-Garlic Sauce

The freshly squeezed lemon juice is what really makes the dish shine.  To make the sauce, start by juicing two large lemons. My Lemon/Lime Squeezer, this made the process super quick and easy, and it got every drop of juice out of the lemon halves.  Two lemons resulted in about ¾ cup of juice! Next, whisk in the garlic, parsley, olive oil, dijon mustard, a pinch of salt and a couple cracks of black pepper.

Prepare Salmon and Zucchini

Using a mandoline slicer, or with a knife, thinly slice zucchini, and fresno peppers (if using). Place salmon on pan, skin side down, and season with salt and pepper.  Place zucchini on pan in a single layer.  Spoon ¾ of the sauce over salmon, and zucchini, saving the remaining sauce for serving.  Place one lemon slice on the top of each salmon filet.

Broil

Broil salmon for 5-6 minutes.  Remove from oven and serve immediately.

Why I Love My Lemon/Lime Squeezer

This is a kitchen tool that I use ALL THE TIME! Like I mentioned above, I love using fresh citrus in recipes, and having a quality lemon/lime juicer is what really makes it easy. I like that this is a lemon AND lime juicer, so I only need one tool that does multiple jobs.  It’s large enough too, that a small orange can fit in it too.

I also like how easy it is to use.  A lot of juicers require a lot of force to use, and this one doesn’t.  By placing the lemon in the juicer, cut side down, the heavy metal bowls squeeze every drop out, without any seeds.  The only thing I noticed is that it’s a little trickier to squeeze if your lemon is a little knoby at the end, but that is solved by just by simply cutting it off, so that there is a flat surface.

 4 salmon filets
 2 zucchini, thinly sliced
 ¾ cup freshly squeezed lemon juice *
 3 tbsp olive oil
 2 tsp minced garlic
 2 tbsp fresh parsley, finely chopped
 2 tsp dijon mustard
 1 tsp salt
 ¼ tsp black pepper
 1 fresno chili, thinly sliced (optional)
 ½ lemon, sliced

Preheat broiler to 500 degrees.

Thinly slice zucchini, and fresnos (if using), and spread out in a single layer on baking sheet, around salmon. Place a slice of lemon on top of each filet.
