15 Minute Honey Glazed Baby Carrots

Honey Glazed Baby Carrots make a quick and easy side dish that the entire family will love.  Whether it’s a weeknight meal, or for a holiday dinner, these Honey Glazed Baby Carrots are sure to impress even your pickiest eaters!

As we have been stuck here in quarantine, my mind has been focusing on Easter.  Yesterday I shared a recipe for Rice Krispie Treat Eggs In A Nest, and tomorrow, I’ll be sharing a recipe for the cutest little Baby Chick Cheeseballs!  These Honey Glazed Baby Carrots are so easy to make and are ready in only 15 minutes!  And since you cook them on the stovetop, they won’t take up extra space in your oven on Easter.  If you don’t have baby carrots, just peel regular carrots, and cut them into coins, and follow the recipe directions.  You can even prepare these carrots ahead of time, making dinner time even easier.  To prepare the carrots ahead of time, boil the carrots until fork tender, and then drain completely.  About 5-10 minutes before serving, make the quick sauce with the melted butter and honey, and add the carrots.  Let them simmer to warm through.

How To Make Honey Glazed Baby Carrots

Boil Carrots
Bring a pot of salted water to a boil and add carrots.  Cook 5 minutes, or until carrots are fork tender.  Drain.

Make Glaze
Return pot to heat and add butter, heat until shimmering.  Stir in honey, brown sugar, salt and pepper.  Cook for 1 minute.

Finish Carrots
Add drained baby carrots to glaze, and stir to completely coat.  Let simmer for 5-10.  Remove from heat and serve with fresh, minced parsley.
