This Valentine’s Day lunch doesn’t get any easier!
I never posted a recipe for a Cheese Quesadilla before, because, really, does anyone really need a recipe to cook cheese in a tortilla? Probably not, but I decided to share, because these turned out perfect, and they were absolutely delicious.
But what makes this quesadilla so good? It’s the combination between the tortillas stuffed with good cheese, and fried in butter! Because everything is better with butter!
Quesadillas are a go-to snack in our house, and D.J. always requests them when we have leftover chicken so that he can just toss it in a buttered pan or in the toaster oven, and he has a snack in a matter of minutes. There are so many different ways to customize Quesadillas too – add leftover taco meat, add bbq chicken, add scrambled eggs and bacon, add black beans… the possibilities are endless.
Making the tortillas into heart shapes is super easy, and you can do it one of two ways – with a cookie cutter or with kitchen shears. I used the kitchen shears method, I think it’s easier, but if you want smaller quesadillas, or different Valentine’s Day shapes, use cookie cutters instead.
To make the hearts, gently fold a flour tortilla in half, and use the kitchen shears to cut half of a heart shape into tortilla. Unfold the tortilla, and then use the heart as a template to cut out the rest of the quesadillas. Easy peasy. And they are so dang cute.
After you get the tortillas ready, shred the cheese and get your filling ready. Melt 2 tbsp butter and 1 tbsp olive oil in a large non-stick frying pan until it’s shimmering.
Put tortilla down, swirl it around in the butter, and then layer the cheese and filling, and then put the second tortilla on top.
Cook for 2-3 minutes, until the tortilla is crispy, carefully flip the quesadilla over and cook another 2-3 minutes on the other side until the tortilla is crispy and the cheese is melted.
