Hatch Chiles

Since we moved here, we’ve heard nothing but good things about hatch chiles.  We’d see them in the grocery store, be offered bags from friends, and see stands on the side of the road.

What are your favorite hatch chile recipes?  If you have some, share them with me in the comments below.

We have never had hatch chiles before, so we decided to try a few from the grocery store.  Tried them.  Loved them.  So, of course our next step was to look for one of these road side stands, and buy some chiles.  We found a place that sold them by the laundry basket full, and they were buy one get one free.  I paid $35 for about 30 pounds of chilies!

As we spoke to the gentleman who sold us the chiles, he told us that we were buying them at the right time.  He said that between the last week of September and the first two weeks of October, the hatch chiles are at their best.  This is the time of the year when they are the meatiest, and have the most flavor.  He offered us a taste of some other chiles while we were there, and we just dove right in and took bites of the raw chiles – yum!

Hatch chiles taste sweet and spicy, and the spice hits you in the back of your mouth, after the sweet flavor kind of goes away.  These chilies are popular in southwestern cuisine, especially in New Mexican and Colorado dishes since they are grown in Hatch Valley, New Mexico.

Since I wasn’t 100% sure what to do with the chiles, I decided to make chili.  I used five of the roasted chilies in my chili, and was very impressed with the heat that they provided.

Anthony told us that the chilies make delicious Posole, so I am excited to find a posole recipe.
