Halloween will be here before we know it! This fun Dead Man Meatloaf was a huge hit at our Halloween party last year, that I know it needed to be the first Halloween recipe that I shared with you this year!
To make even more of an impression, serve meatloaf over baked beans “dirt” or with some mashed potato ghosts!
BBQ Meatloaf Recipe
1 lb ground beef
1 tbsp milk or cream
1 ¼ cup BBQ sauce, divided
½ cup plain bread crumbs
⅓ cup panko bread crumbs
2 tsp each; garlic powder and salt
1 tsp each; black pepper and paprika
For Face & Decorating
red or orange bell pepper for mouth
black olives for eyes
radish or baby potato for eyes
ketchup for “blood”
Preheat oven to 425 degrees. Line a baking sheet with parchment or foil.
With your hands, combine ground beef, egg, ¼ cup BBQ sauce, spices, milk and bread crumbs until combined.
Form into a body and head. To do this, I made the arms and legs first, using about 2 tbsp of mixture each. Next, I formed the head, using about 1 ½ cups of the mixture. and last, I made the body with the remaining meatloaf mixture. When forming the head, be sure to press flat into a disc shape instead of a ball. Attach arms and legs to body by pressing ground beef together, and leave head separate.
Pour remaining BBQ sauce over the top, and spread around using the back of a spoon.
To make face, place a thin slice of red or orange bell pepper frowning for the mouth, and use a slice of radish or baby potato and sliced black olives to make the eyes.
Bake 30-35 minutes. Remove from heat and let rest 5 minutes. For dramatic effect, place a knife in the chest, with some ketchup around the blade for blood.
