I love english muffins. The way the butter and peanut butter gets into the holes, and the crunch make for one delicious bite. Although english muffins make a great breakfast or after school snack, peanut butter and jelly on an english muffin can get boring. We also use english muffins for English Muffin Pizzas. They are always on the menu in our house, whether for an after school snack or for dinner on nights when you have to run out the door. So, I thought to myself, if english muffins can make pizzas, what else can they make? So I headed to the kitchen and started cooking.
Well, maybe not quite cooking, but more like creating! I looked in my fridge and on my counter, and after some trial and error, these are 3 of my favorites:
Ants On A Log
The traditional peanut butter got me thinking about what else we use peanut butter for, and Ants On A Log was the first thing that came to mind. I started by toasting an english muffin and spreading peanut butter on each side. Then, I thinly sliced a rib of celery and placed it over the peanut butter. Last, I topped the english muffin with raisins.
Strawberries and Cream
A toasted bagel with strawberry cream cheese is one of Anthony’s favorite breakfasts so I figured why not change it up and make it on an english muffin. Like the others, I started by toasting an english muffin, and then spread cream cheese or strawberry cream cheese on each side. I then topped each half with thinly sliced strawberries.
BLAT – Bacon, Lettuce, Avocado and Tomato
The day I started creating these english muffins, I had a toasted BLAT sandwich for lunch. I still had some of the toppings left, so I made them into a BLAT open faced sandwich/avocado toast on an english muffin kinda thing. To make this one, I toasted an english muffin and spread mashed avocado over each side. I then topped each half with a piece of lettuce a slice or two of tomato, and some crispy bacon. And to finish, I sprinkled it with a little salt and pepper.
English muffins don’t have to be boring anymore. My favorite out of the 3 was the BLAT, and my boys liked the Ants On A Log.
