I have recently became a huge fan of pancake mix.  It’s great for week day mornings when you don’t have time to make pancakes from scratch and you can use it for so many other things other than pancakes.  Who knew?  In my quest of searching for a waffle recipe using pancake mix, I came across a banana bread recipe and it inspired these banana pancake muffins.

The recipe really couldn’t be easier.  Just mash overripe bananas, and mix them into a bowl with pancake mix and a few other ingredients that you probably already have in your pantry, fill muffin tins and bake!

In a small bowl, mash banana.  Add vanilla and softened butter and using a fork, mash together until well combined.  This is a great step for little ones to help with!

They are light, and fluffy and taste exactly like a banana pancake!  I had mine with a little bit of butter.  What do you put on your banana bread?

  1. It only takes a scant 1/4 tsp of salt for these muffins. My first batch had to be thrown away because of all the salt. Other than that, they’re ok, though you can barely taste the banana

  2. Made these came out delicious. I used regular white sugar because that’s what I had. And i topplped each with a few blueberries and some sugar. So good!!!

2 cups of brown sugar didn’t sweeten enough. I would recommend 1/3 of white can sugar and Tyson of cinnamon.
