These muffins are bananas! B-A-N-A-N-A-S! Really, they are light and fluffy and super easy to make and best of all… they are ready in 30 minutes, from start to finish!
I have recently became a huge fan of pancake mix. It’s great for week day mornings when you don’t have time to make pancakes from scratch and you can use it for so many other things other than pancakes. Who knew? In my quest of searching for a waffle recipe using pancake mix, I came across a banana bread recipe and it inspired these banana pancake muffins.
The recipe really couldn’t be easier. Just mash overripe bananas, and mix them into a bowl with pancake mix and a few other ingredients that you probably already have in your pantry, fill muffin tins and bake!

Gather your ingredients. Using overripe bananas is key to moist banana bread.
2 eggs
1/4 cup water
1/3 cup brown sugar
1/2 cup butter, softened
2 tsp vanilla
2 overripe bananas
1 tsp salt
2 cups pancake mix
Preheat your oven to 375 degrees. And place cupcake liners in a muffin tin, or lightly spray with Pam to grease.
In a large bowl, combine eggs, water and brown sugar until the sugar is dissolved.
In a small bowl, mash banana. Add vanilla and softened butter and using a fork, mash together until well combined. This is a great step for little ones to help with!
Add pancake mix, salt and mashed banana mixture to eggs and sugar. Stir until combined. Lumps are okay.
Add 1/4 cup of banana pancake muffin mixture to each muffin tin.
If you want, add chocolate chips or nuts to your banana pancake muffins. We added some chocolate chips!
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool 5-10 minutes and enjoy!
They are light, and fluffy and taste exactly like a banana pancake! I had mine with a little bit of butter. What do you put on your banana bread?

It only takes a scant 1/4 tsp of salt for these muffins. My first batch had to be thrown away because of all the salt. Other than that, they’re ok, though you can barely taste the banana

I just made these muffins. I doubled the recipe and they are amazing. I only used the salt for 1 batch, didnt double it and I mashed 6 bananas for the doubled recipe and it had so much flavor. Will make these many more times.
Made these came out delicious. I used regular white sugar because that’s what I had. And i topplped each with a few blueberries and some sugar. So good!!!
2 cups of brown sugar didn’t sweeten enough. I would recommend 1/3 of white can sugar and Tyson of cinnamon.
