Cinnamon Roll Quick Bread (No Yeast)

This easy to make Cinnamon Roll Quick Bread is ready in an hour and has no yeast! It makes a delicious snack, breakfast or can be made into mini loaves and shared with family and friends.

Since the bread only takes an hour to bake, it’s perfect for Thanksgiving morning.  Thanksgiving is always so hectic, and we usually forget about breakfast while we are planning dinner.  Bake the bread the night before, or even a couple days ahead of time, and warm it up to serve for breakfast.  It makes a great Christmas morning breakfast too.

I have been on a quick bread kick lately.  Last week I shared a Pumpkin Banana Bread and about a month ago, I shared my Simple Banana Bread recipe. Quick breads are so easy to make, and are always a crowd pleaser.  It has a swirl of buttery cinnamon sugar running through it and is topped with a sweet icing, making it taste just like a cinnamon roll.

You probably already have everything you need in your pantry to make Cinnamon Roll Quick Bread, which makes it a great recipe for when you need to whip something up last minute.  This bread, like other quick breads, can be made ahead of time.  It also freezes really well. To freeze, tightly wrap the cooked and cooled bread in plastic wrap and place in a labeled ziplock bag.  It’ll keep for 2-3 months.  Don’t put any icing on the bread if you are freezing it.

If you want to take the Cinnamon Roll Bread to the next level, create a Crumble Topping.  To make the topping, combine 3 tbsp melted butter, ⅓ cup rolled oats, ⅔ cup brown sugar, ½ tbsp cinnamon and a pinch of salt in a small bowl, and top bread before baking.  Still top it with the icing.  You can add some chopped up pecans to the crumble topping too!

When adding the cinnamon swirl to the bread, use a small silicone spatula or a butter knife.  Pour half of the batter into the pan, add the cinnamon sugar filling, and then top with remaining batter.  Then start to swirl.  Just make not to swirl it too much, or it will make the batter heavy, and sink in the middle when baked.

And as if this bread wasn’t sinful enough, serve it warm, straight out of the oven, smothered with butter along side a hot cup of coffee or tea.  If you’re like me, around this time of year, maybe a PSL!  After one taste, everyone will be asking you to make this bread, again and again.  And you probably won’t mind because it is so easy to make! For Bread
 1 ¾ cups flour
 1 ¼ tsp baking powder
 ½ tsp salt
 ½ cup butter, softened
 ¾ cup sugar
 2 eggs
 2 tsp vanilla
 ¾ cup whole milk
For Cinnamon Swirl
 ½ cup brown sugar
 1 tbsp flour
 1 tbsp cinnamon
 1 pinch salt
 ¼ cup butter, softened
For Icing
 2 tbsp whole milk, more as needed
 1 cup powdered sugar
 1 tsp vanilla creamer powder, optional

Preheat oven to 350 degrees. Prepare a loaf pan with non-stick spray.

In a small bowl, combine all ingredients for Cinnamon Swirl and set aside.

In a second small bowl, combine flour, baking powder and salt.

In the bowl of a stand mixer, beat butter and sugar until light and fluffy. Add in eggs, one at a time, then add vanilla and milk. Slowly beat in dry ingredients.

Pour half of batter into prepared loaf pan. Evenly spread Cinnamon Swirl across the bread. Top with remaining batter.

Using a butterknife of a silicone spatula, swirl cinnamon throughout bread.

Loaf - 55-60 Minutes

4 Mini Loaf - 30-35 Minutes

Remove from oven and let cool in pan 10 minutes. Transfer to cooling rack and let cool 5 minutes before icing.
