Chicken Parmesan + Lasagna = Pure Deliciousness!
Chicken Parmesan and Lasagna are two recipes that I make all the time. I decided to combine the two together into one dish, and quickly found out that this will be a repeat offender! Chicken Parm Lasagna Rolls also make a great appetizer!
Chicken Parm Lasagna Rolls do require a little bit of work to prepare, but are worth every single second put in.
How To Make Chicken Parm Lasagna Rolls
Prepare Chicken
Set up a three-step breading station with flour, egg and breadcrumbs/parmesan cheese. Cut chicken into 1″ bite size pieces and place into a bowl with 1 cup Italian salad dressing. Let chicken marinate for at least 30 minutes.
Working in batches, coat chicken in flour, then egg, and then breadcrumbs.
In a large skillet, over medium-high heat, add 2 tbsp oil, and heat until shimmering. Again, working in batches, cook chicken 2-3 minutes per side – until browned. The chicken will NOT be cooked through. It will continue cooking in the oven. Set cooked chicken on a plate to cool while you prepare everything else.
How To Cook In Air Fryer: Place prepared chicken in a single layer in basket, and spray with olive-oil spray. Preheat Air Fryer to 385 degrees and cook for 5 minutes.
Boil Pasta
In a large pot of salted water, cook lasagna sheets until al-dente. Drain and set aside.
Prepare Cheese Filling
In a medium bowl, mix together cheeses, egg, and herbs until well combined. Set this bowl aside.
Assemble Lasagna Rolls
Lay a cooked noodle on a flat surface and spread 1-2 tbsp cheese filling across noodle with a spoon, leaving about ¼” at one end without cheese.
Put one piece of chicken on cheese, and gently roll noodle towards the un-cheesed side.
Place seam side down in a baking dish or on a quarter sheet-pan. Repeat with remaining chicken and lasagna noodles.
Pour 1 tbsp Spaghetti Sauce over the top of each lasagna roll, and top with shredded mozzarella cheese.
Cook & Serve
Bake Chicken Parm Lasagna Rolls in a preheated 375 degree oven for 8-10 minutes until cheese is melted and bubbly. Serve immediately with extra Spaghetti Sauce and freshly grated parmesan cheese.
