Sweet potatoes are important to me. They were a big part of my volunteer time at the Food Bank of Central and Eastern North Carolina and this Sweet Potato Pie Recipe is the recipe that helped me make it a few rounds in the Master Chef audition process. This is also the same Sweet Potato Pie Recipe that has been featured on the Food Banks annual telethon since 2012.
I’m not too sure why this recipe hasn’t been posted before, I’m sure it has, but after I did a little administrative clean up, I think the recipe was deleted somehow, oops!
Sweet Potato Pie is such a simple recipe. It is similar to Pumpkin Pie, but so very different at the same time. This recipe uses the same Homemade Pie Dough that I used when making other pie recipes and Chicken Pot Pie. To start this recipe, start by making your own homemade pie dough – it makes all the difference.
I think what makes this recipe so special is that it has been completely adapted and configured myself. I got a copy of the original Sweet Potato Pie recipe which came from a woman that DJ’s Dad used to work with, Charlene Lane. Charlene’s recipe had only the ingredients needed, and included the “secret ingredient” in her recipe – vanilla extract.
I have made this recipe probably 1957434 times, especially when I was preparing for Master Chef. We have tried all sorts of variations of the recipe from canned sweet potatoes, which the original recipe called for to oven roasted sweet potatoes, and more.
After all of that testing, this Sweet Potato Pie Recipe is the perfect recipe. Serve this Sweet Potato Pie at your next dinner party or at Thanksgiving instead of Pumpkin Pie. Wherever it is that you serve this pie, it will definitely make you famous. DJ’s boss has even started calling me SPPQ or Sweet Potato Pie Queen from this recipe, and his participation in the taste testing.
2 cups mashed roasted sweet potatoes – 2-3 large raw sweet potatoes
1/8 cup maple syrup
3 eggs, slightly beaten
1 cup evaporated milk
1/2 stick (1/4 cup) butter, softened
1 small box instant vanilla pudding
1 cup firmly packed brown sugar
1 cup white sugar
1 1/2 tsp salt
1 tsp cinnamon
2 tsp vanilla extract
1 recipe homemade pie dough
Preheat oven to 400 degrees. Slice sweet potatoes in half and poke with a fork. Roast for 40-50 minutes until softened. Remove from oven and scoop out sweet potato from the skin and mash with a whisk until smooth. This can be done ahead of time.
Lower temperature of oven to 350 degrees. Prepare pie dough according to recipe directions. Roll out 1/4” thick and press into a pie plate. Trim off any excess pie dough and set aside.
In a large bowl mix, 2 cups mashed sweet potatoes with remaining ingredients until smooth.
Pour pie filling into prepared pie crust.
Bake for 60-75 minutes, or until pie filling starts to firm. Baking time depends on how deep your pie plate is. Remove from oven and let cool to room temperature before serving.
