Teriyaki Chicken Foil Packs

Teriyaki Chicken Foil Packs are an easy and delicious meal for a busy weeknight or camping.  The foil packs are filled with chicken, vegetables and a homemade teriyaki sauce.  Toss them on the grill and serve with rice or noodles.

We went camping a couple weeks ago with some family, and I made these Teriyaki Chicken Foil Packs for the campfire for dinner our first night.  I was totally unprepared for this camping trip and left everything to the last minute.  The night before camping, as I tried to figure out my meals for the weekend, I made these foil packs.  Prepping the chicken and veggies took about 10 minutes from start to finish.  After folding up the foil packs, I put them all, seam side up in a ziplock bag to slide into the cooler.

We cooked the foil packs on a log on the campfire, and they were cooked in about 10 minutes.  It really made the perfect camping dinner.  We didn’t serve ours with rice, we just had the chicken and veggies.

Minimal clean up, and minimal trash.  This made an awesome camping dinner, and was the perfect way to start our weekend.  With everything that we have had going on with my epilepsy this past month or so, this trip was what we needed to relax, and enjoy that I am finally feeling better!  We made some s’mores and roasted hot dogs on the fire too, because it’s not really camping without a fire roasted hot dog and a s’more, right?

It was a great time, and Anthony even lost his other front tooth while we were there…. and he lost a shoe in the river. How?  I’m not too sure, but thankfully his Aunty Becky came to the rescue with extra shoes!

Teriyaki Chicken Foil Packs are filled with chicken, vegetables and homemade teriyaki sauce. They make the perfect meal for busy weeknights or campfires.

 4 chicken cutlets
 1 tbsp olive oil
 ½ red pepper, diced
 1 zucchini, diced
 1 cup shelled edamame
 3 green onions, thinly sliced
Teriyaki Sauce
 1 tbsp cornstarch
 ½ cup low sodium soy sauce
  cup brown sugar
 3 tbsp garlic
 2 tsp ginger powder
 1 tsp white pepper
 1 tbsp sesame oil

In a small pan, combine cornstarch, soy sauce, sugar, garlic, ginger, white pepper and sesame oil. Bring to a simmer and let cook 5 minutes, until thickened. Remove from heat and set aside.

Cut 4, 18x20 squares of heavy foil and lay on a flat surface. Evenly divide veggies into each packet and top with a chicken cutlet. Add 3 tbsp teriyaki sauce to each packet. Fold foil over to form a well sealed packet.

To cook on grill: Place foil packs onto grill and grill for 5-6 minutes, then flip over and grill for an additional 5-6 minutes or until chicken is cooked through.

To cook in oven: Place foil packs onto a rimmed baking sheet. Bake in a preheated 425 degree oven for 15-18 minutes, or until chicken is cooked through.

Remove foil packs from grill (or oven) and let rest for 5 minutes.

Carefully open packets and serve with remaining sauce, and rice. Top with sliced onions.
