This chili has the perfect combination of spices, vegetables, meat and beans. With the weather slowly starting to cool down, this chili will warm you from the inside out! Best of all, you don’t have to wake up at the crack of dawn to have this chili ready for game time!
This recipe is a variation of DJ’s chili. His is pretty damn delicious, but is a lot of work, and has a lot of ingredients – totally worth it, but just not a simple recipe. This Simple Game Day Chili is just that, simple. With only a few fresh veggies, some spices, canned tomatoes, canned beans and a pound of ground beef, this recipe is ready with only a few hours of cooking on the stove, and it’s crockpot and freezer-friendly too!
Chili is easy to make, and a great way to stretch your food budget. You can make this recipe even easier by tossing all the ingredients in your crockpot, this is a recipe that you can prepare the night before, turn it on in the morning, and come home to dinner being ready, and the sweet and spicy smell of chili throughout the house. Freeze any leftovers flat in a ziplock bag (to save space in the freezer), and heat up for a quick and easy dinner another night.
It seems like a lot of ingredients, but you probably have most of them in your fridge and pantry, and the rest are spices.
3 ribs celery, diced
1/2 – 1 poblano, finely diced (depending on how spicy you like it)
1/2 red bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 red onion, finely diced
1/2 yellow onion, finely diced
1 lb ground beef
1 15 oz can black beans, drained
1 15 oz can kidney beans, drained
1 15 oz can petite diced tomatoes
2 tbsp chipotle in adobo (more if you like it spicy)
1 28 oz can tomato sauce
1 cup frozen corn
2 tbsp chile powder
2 tsp each; salt, paprika, cumin, garlic powder
1 tsp each; black pepper, onion powder, cayenne powder
pinch red pepper flakes
In a large pot, over medium-high heat, heat 1 tbsp olive oil, and add ground beef and spices. Cook ground beef for 5 minutes, breaking up large pieces.
Add poblano, bell peppers, onion and celery, stir to combine with the meat, and cook until the veggies start to soften – about 5-10 more minutes.
Add diced tomatoes and chipotle in adobo. Stir to combine.
Add beans and tomato sauce and stir to combine.
Reduce heat to low and simmer for 4 hours.
About 30 minutes before serving, add corn and stir to combine.
