Teriyaki Chicken Foil Packs

 4 chicken cutlets
 1 tbsp olive oil
 ½ red pepper, diced
 1 zucchini, diced
 1 cup shelled edamame
 3 green onions, thinly sliced
Teriyaki Sauce
 1 tbsp cornstarch
 ½ cup low sodium soy sauce
  cup brown sugar
 3 tbsp garlic
 2 tsp ginger powder
 1 tsp white pepper
 1 tbsp sesame oil

In a small pan, combine cornstarch, soy sauce, sugar, garlic, ginger, white pepper and sesame oil. Bring to a simmer and let cook 5 minutes, until thickened. Remove from heat and set aside.

Cut 4, 18x20 squares of heavy foil and lay on a flat surface. Evenly divide veggies into each packet and top with a chicken cutlet. Add 3 tbsp teriyaki sauce to each packet. Fold foil over to form a well sealed packet.

To cook on grill: Place foil packs onto grill and grill for 5-6 minutes, then flip over and grill for an additional 5-6 minutes or until chicken is cooked through.

To cook in oven: Place foil packs onto a rimmed baking sheet. Bake in a preheated 425 degree oven for 15-18 minutes, or until chicken is cooked through.

Remove foil packs from grill (or oven) and let rest for 5 minutes.

Carefully open packets and serve with remaining sauce, and rice. Top with sliced onions.
