No fuss and no clean up – my kinda dinner! These easy
Foil Pack Potatoes are ready to go on the grill (or in the oven) in about 5 minutes and they make a fantastic side dish to any summer meal!
Foil Pack Potatoes remind me of being a kid and camping. Mom would make them on the grill and it reminded me of her roasted potatoes at home. These potatoes are very similar to my Herb and Garlic Roasted Potatoes that I have shared before, but something about the foil pack makes these potatoes just melt in your mouth!
To make them you just toss everything together in a big piece of foil, put it on a lower temperature part of the grill and walk away! The foil pack will cook the potatoes for you with no fuss while you make the rest of your dinner. Perhaps

If you are following my
May Menu, I have these listed at “Potato Planks”. When I went to cook them for picture purposes (basically everything I share on here gets made 2-3 times before to make sure it’s good), I realized that I had the wrong type of potatoes on hand. So, I improvised, and we had Foil Pack Potatoes instead. The ingredients in both recipes are the same, you just chop the taters and cook them different!
Again, D.J.’s new grill inspired these potatoes but, if you don’t have a grill, cook these potatoes the same way in the oven. 400 degrees for about 30-40 minutes or until the are soft and tender!
Best part of this meal… NO CLEAN UP! Make them and serve them in the same foil pouch!
2-3 lbs baby red potatoes (or whatever potatoes you have), diced
3 tbsp butter
1 tbsp salt
1/2 tbsp black pepper
1 tbsp olive oil
2 tsp each; parsley and paprika
1 tsp onion powder
1/2 tbsp fresh garlic, minced
Preheat grill or oven to 400 degrees.
Lay out a large piece of foil, and start to fold into a pouch by folding up the sides. Add all ingredients to foil and fold up to seal. If you need to, wrap it up in another piece of foil so that it doesn’t tare while cooking.
Cook for 35-45 minutes or until fork tender- depending on how many potatoes you made and how big you cut them.
Remove from heat and serve right away in the foil pouch you cooked them in!
