Green Bean Casserole is the classic Thanksgiving side dish. Before I even got the chance to take a picture of the inside of this green bean casserole, the entire thing was gone! I love green bean casserole, and what makes this recipe so much better is the homemade cream of mushroom soup that I used in place of the stuff in the can. Homemade cream of mushroom soup can be made up to a week ahead of time, and the leftovers can be frozen. Using the homemade soup in your Green Bean Casserole will take this dish to a whole new level! The recipe starts with homemade cream of mushroom soup. The soup I made is condensed, just like in the can, and although not as quick as opening a can it can be made in only 15 minutes, and up to a week in advance. Make a big batch and freeze the extras to use in your other favorite recipes that use cream of mushroom soup. The next thing that takes this recipe from good to great is the use of fresh green beans. This really makes such a difference in green bean casserole. The fresh green beans really elevate this dish.
1 1/2 lbs fresh green beans, stems removed
1 cup homemade cream of mushroom soup
1/2 cup sour cream
1/2 cup cream cheese. softened
1 tsp salt
1/2 tsp black pepper
pinch red pepper flakes, optional
6 oz french fried onions
Preheat oven to 400 degrees.
Prepare green beans by removing stems and cutting into 1” pieces. Place cut green beans in a large pot of salted boiling water and cook 3-4 minutes. Drain and set aside.
In a large bowl, whisk homemade cream of mushroom soup, cream cheese, sour cream, salt and pepper until well combined.
Stir in green beans with a wooden spoon and transfer to a casserole dish.
When ready to bake, top with french fried onions. Bake in preheated oven for 15-20 minutes, or until the onions are golden brown and the green beans are bubbly.
