I have been on a ground beef kick lately. I guess because it is quick and easy to cook, and it is a great vessel for sneaking vegetables into dinner. This is another old recipe that I have dug up and edited. Korean Beef and Rice is an awesome recipe if you’re in a time crunch, or if you’ve got picky eaters. Cook it up even quicker by using minute rice!
1 lb ground beef
1/2 cup brown sugar
1/4 cup soy sauce
1/8 cup rice vinegar
1 tbsp sesame oil
1 tbsp olive oil
1/4 tsp ground ginger
1 tsp red pepper flakes
1 tbsp asian seasoning
rice, for serving
green onions and sesame seeds as garnish, optional
In a large skillet over medium-high heat, add sesame and olive oils, and heat until shimmering.
Add ground beef and season with asian seasoning cook until thoroughly cooked about 8-10 minutes.
Reduce heat to medium-low and add soy sauce, brown sugar, rice vinegar, ginger and red pepper flakes and bring to a boil.
Reduce heat and let simmer for 3-5 minutes or until rice is finished cooking. Serve over rice with your favorite vegetables.
I served ours with steamed broccoli and some pineapple for dessert. You can really choose any vegetable you wish to go along side of this dish. Some of our favorites are snow peas, zucchini, broccoli and peas.
