Instant Pot Macaroni and Cheese…it’s quick, easy, creamy, cheesy and delicious! Best of all, it’s ready in 20 minutes!
If you’ve been following for a while, my Instant Pot is quickly becoming my favorite kitchen appliance. I can make dinners I forgot all about usually in under an hour, and it’s just so versatile. I’ve made this Macaroni and Cheese, baby food, an Instant Pot Unstuffed Cabbage Rolls, shredded beef tacos, chicken stock and more, and it’s only been a couple weeks! If you don’t already have one, add an Instant Pot to your Christmas list!
Properly cooked pasta is imperative to good macaroni and cheese, so I was a little skeptical when I started cooking this recipe. We went to a friends house for dinner, and I loved the IP Mac and Cheese idea, so I took over to get some good pictures, and so I could share the recipe with you! Like I said, I was nervous cooking the pasta in the Instant Pot, but I figured what the hell, what do I have to lose… and the answer was nothing! The Instant Pot really knows how to cook pasta.
My friends had a great idea to make it a Macaroni and Cheese bar instead of just plain ‘ol mac and cheese! Great idea, Becky! We added; cooked bacon, cooked smoked sausage, steamed broccoli, extra shredded cheeses and peas to our table, but there are so many other options!
This recipe only takes 6 minutes to cook on manual mode, but with the time to get to pressure, release the pressure and stir in the cream and cheeses, the total time for this recipe is 15-20 minutes!
Instant Pot Macaroni and Cheese
1 lb elbow macaroni
1/2 stick butter
3 1/2 cups chicken stock
3/4 cup milk or cream
1 tbsp dijon mustard
2 tsp salt
1 tsp black pepper
3 cups shredded sharp cheddar cheese
Add pasta, 2 tbsp butter, dijon mustard, salt, pepper and stock in Instant Pot and stir to combine. Close lid and seal valve on your Instant Pot.
Set to high pressure, 6 minutes in manual mode. (It will take around 10 minutes to pressurize). When it’s done cooking, do a quick release and keep the Instant Pot in warm mode.
Carefully remove lid, and stir in milk and cheese until fully melted. Serve immediately.
