Broccoli is the vegetable of choice at our house. Anthony absolutely LOVES broccoli and asks for it every time I ask him what veggie he wants with dinner. Not only is broccoli loaded with nutrition, this simple recipe will make skeptics believers. This Parmesan Roasted Broccoli is the way I always made broccoli when I worked at the preschool making it both kid-tested and kid approved – even my Dad who only eats corn and the occasional pea and maybe some onions liked this broccoli!
From start to finish, making this broccoli takes about 20 minutes from start to finish, and your kids will just devour it. If my Dad eats it, your kiddos will eat it too! I promise!
This Parmesan Roasted Broccoli pairs well with almost any meal! Turkey, Roast Beef, Pork Tenderloin, Roasted Chicken even Salmon! By tossing the broccoli with melted butter and garlic makes the florets tender and they melt in your mouth and the parmesan cheese over the top makes this broccoli heavenly!
If you roast your broccoli about 5 more minutes, the florets will become a little crispy and even more succulent! But your kiddos might not like the texture as much.
3-4 lbs broccoli crowns cut into florets – 2 large or 3 small (this is just the top of the broccoli with just a little bit of the stems)
1 tbsp (2 cloves) garlic, minced
1/2 cup (1 stick) butter, melted
1/2 tbsp salt
2 tsp black pepper
1/3 cup finely grated parmesan cheese
Preheat oven to 425 degrees.
In a large bowl, mix melted butter, garlic, salt and pepper. Add broccoli and toss together until broccoli is completely coated with butter and garlic mixture.
Spread broccoli out in an even layer on a sheet tray and bake for 20-25 minutes, tossing half way through.
Once broccoli is fork tender, remove from oven and toss with parmesan cheese. Serve right away.
