Cauliflower Rice is a fantastic, simple recipe to keep in your fridge or freezer for an easy, healthy, gluten-free side dish.
My boys weren’t always fans of cauliflower on it’s own, but they can’t get enough Cauliflower Rice! I love that it takes about 10 minutes – start to finish, including clean up. Easy peasy, and super tasty! My kinda recipe. It’s also a great way to sneak veggies into your kiddos meals. Call it rice, and they won’t know the difference! Once they devour their entire plate, let your kids know that they just at cauliflower, and watch their reactions. If it’s anything like Anthony’s it’s probably pretty great!
Just like rice, you can dress it up, or just leave it simple like this. To make things super easy, you can buy pre-made cauliflower rice. Costco seems to have the best prices on it – and it’s organic. By adding cauliflower to our diets were:
- Reducing Cancer Risk.

- Provides High Levels of Vitamins and Minerals (especially important Vitamin C and Vitamin K)
- Improves Digestion and Detoxification.
- Aids in Weight Loss.
- Helps Balance Hormones.

Pretty awesome right? All by a simple little swap! When we’re not eating it just as plain white “rice”, I like to fry it up and make Cauliflower Fried “Rice“. Yum!
1 head cauliflower
2 tsp salt
1 tsp black pepper
2 tbsp olive oil
Break up cauliflower into large chunks. In the bowl of a food processor, working in batches, pulse cauliflower until it resembles rice.
In a large pan over medium-high heat, heat olive oil until shimmering.
Add cauliflower and season with salt and pepper. Cook, stirring frequently, and gently – about 6-8 minutes.
Serve immediately as a substitute for rice.
