It’s spring, and hopefully will stay that way! Unless you live here in Colorado, then you’re really not safe until June! I love spring, the weather is warm, plants and flowers are starting to grow, the trees are flowering, and fresh produce is finally hitting the shelves at the grocery store – expect Florida, you lucky guys get fresh produce all year. If you couldn’t tell, I am really excited for spring. Not just the warm weather and veggies, but I am excited to see my baby back our on the soccer field!
I’m also really excited for April’s menu! After shopping around for the best deals at my local grocery stores, and getting some goods in bulk at Costco, the grand total for April’s Budget Menu is $231.56! Shopping at Costco has saved me so much money… but I’ll explain more about that in a minute. April’s Budget Menu Plan has six great new recipes; Carne Asada Tacos, Grilled Green Chili and pepper Jack Cheeseburgers, Homemade Potato Chips, Scalloped Potatoes, Chicken Fettuccine Alfredo with Peas, Chicken Cordon Bleu Casserole and CrockPot Chicken and Broccoli!
I’ve made April’s grocery lists a little bit different, as I have been following them, and they are a little confusing. Check your kitchen inventory before going shopping, and refer to the main grocery list – the monthly one to make sure that you’re getting everything you need. I am human, and I forget, so please if there is anything missing, leave a comment, and help others out, and I’ll update the menu!
Since getting my Costco membership, I have started to save even more money, and I really suggest sucking it up, paying the $55 and getting your membership. I have saved sooooo much already. We are able to get ground beef for $2.79 a pound, 2 dozen oragnic eggs for $7, and a 5 lb block of cheese for $10 – Tillimok too! You’re going to get 1lb of cheese for $8 at the grocery store, and those are only a few things that I saved on. If you want to save money, Costco will really help – especially if you have the space to store things. I still think my favorite deal is the coffee – 2.5 lbs for about $13. Makes me smile from the inside out… but enough about coffee and more about meal planning.
I’ve mentioned time and time again how important meal planning is if you really want to save money on groceries, and how a single trip to the grocery store will save you a ton of money because there are no impulse buys – especially when you have a list. But, the truth is that we all are guilty of those last minute, nightly grocery trips that end up costing us $5-20 more than we expected. Probably because of the convenience of foods and such, but it really does waste money – even if you’re eating the food you bought, your other groceries are just sitting in the fridge waiting to be cooked. In the past, this has made my grocery budget rise and my bank account shrink, and with that I knew it was a good time to start being more strict about my grocery shopping, and if I don’t have the items I need, I skip them or make something else, until I can get to the store for what I actually need. April’s menu starts off with a fun April Fools dinner. Meatloaf Cupcakes with Mashed Potato Icing look like cupcakes are are extra tricky because they are loaded with veggies that your kids won’t know are there! The rest of the month is filled with easy recipes that remind me that it’s spring and that can be prepared ahead of time. But my most favoritest (I’m pretty sure favoritest is a word… no?) part of April’s menu is dinner on April 16th – Chicken Fettuccine Alfredo with Peas. D.J. made it for me this past weekend, and my mouth still waters thinking about it. I really think it’s the best thing I’ve eaten all year!
