April’s Budget Menu Plan Will Put A “Spring” In Your Step! $231 for 30 Days of Dinners with Free Grocery Lists and Recipes

It’s spring, and hopefully will stay that way!  Unless you live here in Colorado, then you’re really not safe until June!  I love spring, the weather is warm, plants and flowers are starting to grow, the trees are flowering, and fresh produce is finally hitting the shelves at the grocery store – expect Florida, you lucky guys get fresh produce all year.  If you couldn’t tell, I am really excited for spring.  Not just the warm weather and veggies, but I am excited to see my baby back our on the soccer field!

I’m also really excited for April’s menu!  After shopping around for the best deals at my local grocery stores, and getting some goods in bulk at Costco, the grand total for April’s Budget Menu is $231.56!  Shopping at Costco has saved me so much money… but I’ll explain more about that in a minute.  April’s Budget Menu Plan has six great new recipes; Carne Asada Tacos, Grilled Green Chili and pepper Jack Cheeseburgers, Homemade Potato Chips, Scalloped Potatoes, Chicken Fettuccine Alfredo with Peas, Chicken Cordon Bleu Casserole and CrockPot Chicken and Broccoli!

I’ve made April’s grocery lists a little bit different, as I have been following them, and they are a little confusing.  Check your kitchen inventory before going shopping, and refer to the main grocery list – the monthly one to make sure that you’re getting everything you need.  I am human, and I forget, so please if there is anything missing, leave a comment, and help others out, and I’ll update the menu!

Since getting my Costco membership, I have started to save even more money, and I really suggest sucking it up, paying the $55 and getting your membership.  I have saved sooooo much already.  We are able to get ground beef for $2.79 a pound, 2 dozen oragnic eggs for $7, and a 5 lb block of cheese for $10 – Tillimok too!  You’re going to get 1lb of cheese for $8 at the grocery store, and those are only a few things that I saved on.  If you want to save money, Costco will really help – especially if you have the space to store things.  I still think my favorite deal is the coffee – 2.5 lbs for about $13.  Makes me smile from the inside out… but enough about coffee and more about meal planning.

I’ve mentioned time and time again how important meal planning is if you really want to save money on groceries, and how a single trip to the grocery store will save you a ton of money because there are no impulse buys – especially when you have a list.  But, the truth is that we all are guilty of those last minute, nightly grocery trips that end up costing us $5-20 more than we expected.  Probably because of the convenience of foods and such, but it really does waste money – even if you’re eating the food you bought, your other groceries are just sitting in the fridge waiting to be cooked.  In the past, this has made my grocery budget rise and my bank account shrink, and with that I knew it was a good time to start being more strict about my grocery shopping, and if I don’t have the items I need, I skip them or make something else, until I can get to the store for what I actually need.  Learn more about saving money on groceries with my 8 Simple Steps To Save Money on Groceries.

Now, before I get to this months menu, and if this is your first time here, I wanted to tell/remind you all, that like the previous months menus, the NEW recipes will be updated throughout the month.  To keep the content on my site relevant and fresh, I share the menu plans recipes throughout the month.  If you’ve signed up for emails, the recipes will come straight to your inbox.  If you haven’t yet, click the bar at the top, enter your email and get all new recipes first!

April’s menu starts off with a fun April Fools dinner.  Meatloaf Cupcakes with Mashed Potato Icing look like cupcakes are are extra tricky because they are loaded with veggies that your kids won’t know are there!  The rest of the month is filled with easy recipes that remind me that it’s spring and that can be prepared ahead of time.  But my most favoritest (I’m pretty sure favoritest is a word… no?) part of April’s menu is dinner on April 16th – Chicken Fettuccine Alfredo with Peas.  D.J. made it for me this past weekend, and my mouth still waters thinking about it.  I really think it’s the best thing I’ve eaten all year!

  • I would love to see your grocery list broken down into where you purchased the items. I think it would be helpful to see where you find the best deals on various items.

  • I recently found your website, and I am a little confused (perhaps, just really tired today :)). Do you purchase all of the monthly list AND then the weekly lists, or are they the same lists just broken down by week.

I made 2 recipes last week and my husband loved them!

    Thank you! 🙂

  • Hi Lindsie, quick question- for Week 1 in April, should there be a pound of ground chicken on the grocery list to make the Asian wraps? Or am I missing something? Thanks!

    • Hi Kasey!

Sorry for the late reply, I was in the hospital. The chicken for the ground chicken is DIY since ground chicken is outrageous. There is a link on how to grind your own chicken, and the steps on the printable recipes!!

  • Hi, did you used to give ideas for breakfast and lunches as well before? I thought I had seen that but I may be wrong. I was trying to find that on the recent April plan 🙂

  • Okay, thank you! We bought stuff for two weeks of the meals and weren’t doing them in order. This has been soooo helpful. Thank you!

  • Hello! I am so glad I found your blog a few months ago! It has saved us tons of money and time! I’m just wondering if I missed the emails for this week’s new recipes! We were really excited to try the Green Chile burgers last night, but I ended up making breakfast since I didn’t see a recipe. I’m hoping to make the ham sandwiches and potato chips for dinner tonight!

    • Hey Caren!

It’s been one of those weeks when nothing really seems to go right – ya know? I do not have any photos of the recipe, because I forgot to take them *insert emoji here*, but the recipe is really simple. I have attached it to the bottom of this post! As for the chips, I am working on that right now too!

    • Hey Nancy,

I apologize. From being in the hospital a week or so ago, I am still catching up on everything. This recipe along with a couple others I promised have not been shared yet. I apologize. I should have the recipe (although late) shared within the next ouple of days

      • Hope you are doing better. Still looking for the scalloped potato recipe. Maybe I’m not looking in the correct place?

        • Hi Melissa =)

I did post it, but I’m not sure what the heck happened. Send me an email, and I’ll send it to you first thing in the morning. Sorry for the confusion – the recipe was supposed to be shared when I was in the hospital =| Thanks for understanding <3

  • Hi Lindsie! I was just reading through the comments to find some of the recipes and just wanted to say I hope you’re doing ok! I read that you’ve been in the hospital Hope everyone is well and healthy. Thank you so much for all you do with this blog, such a lifesaver! Sending prayers!

  • Hi. Mrs Lindsie,
I am looking for the Chicken Cordon Bleu Casserole recipe. I hope that you are feeling better!
    Thanks so much 🙂 Nancy

  • Lindsie, I am sorry I am new to your site but really enjoy it. I haven’t received tonight’s recipe in my email and I have searched every where on your site an Pinterest. Can you tell me what I am doing wrong? Thanks! 🙂

  • Hi!

I want to do this, but I am curious… how many people does this cook for? I am looking to just cook for my boyfriend and myself.
