60-Minute BBQ Chicken Meatball Recipe with Hidden Veggies and Homemade BBQ Sauce

These sweet chicken meatballs are packed full of vegetables, just like the Chicken Nuggets with Hidden Vegetables that we made last week, and when tossed in a sweet homemade Brown Sugar BBQ Sauce are the perfect bite sized treat.  Serve over a bed of rice or a bowl of egg noodles for an easy dinner, or toss them in the crockpot and serve as an appetizer at a party or a pot luck.

To make these meatballs, I ground my own chicken.  I used one large chicken breast, and ended up with 40 meatballs!  Grinding your own chicken is very easy, and all you need is a food processor and 15 minutes.

BBQ Chicken Meatballs with Hidden Vegetables Recipe

60-minute bbq chicken meatballs with hidden veggies 

Ingredients:

1 large chicken breast, ground in a food processor – click here to learn how to grind your own chicken breast
2 eggs
1/2 cup bread crumbs (plus up to 1/4 cup more depending on how many vegetables you add)
2 tsp salt
1 tsp black pepper
1 tsp paprika
1/2 zucchini
1/2 yellow onion
2 stalks celery
1 recipe homemade brown sugar bbq sauce (below)

Preheat your oven to 425 degrees.

Roughly chop onion, celery and zucchini.  Add vegetables to bowl of food processor and puree until smooth.  Transfer to a large bowl.

Prepare your chicken breast to grind by chopping it into large chunks, and freezing in a single layer for about 10 minutes.

Add chicken to the same food processor bowl that you pureed your veggies in, and working in batches, grind chicken breast.

Dump into bowl with pureed veggies.  Add eggs, seasoning and bread crumbs.

Optional: Add 1/8 cup flax meal

Mix with your hands until well combined and remove any large chunks of chicken or vegetables while your mixing.

Roll chicken into equal size meatballs and place on prepared baking sheet.

Bake for 20 minutes, or until they reach an internal temperature of 165 degrees.

Add meatballs to BBQ sauce, and simmer for 30 minutes over low heat.

If you have the time, let the meatballs simmer longer or add cooked meatballs to a crockpot and cook on low for 6-8 hours.

Serve immediately over egg noodles or brown rice.

Brown Sugar BBQ Sauce

Ingredients:

1 bottle ketchup
1/2 red pepper, diced
1/2 green pepper, diced
1/2 yellow onion, diced
1 clove garlic, smashed
1/4 cup water
2 tbsp red wine vinegar
1/3 cup brown sugar
2 tbsp chile powder
1 tbsp paprika
2 tsp salt
1 tsp black pepper

Prepare vegetables, and sautee in 2 tbsp olive oil in a large pot over medium-high heat.

Add remaining ingredients and stir to combine.  Reduce heat and let simmer 30-40 minutes.

Remove from heat and let cool 10 minutes.  Working in batches, puree bbq sauce in a food processor until smooth.

Use in the recipe above for BBQ Chicken Meatballs or transfer to a squirt bottle or a tupperware container and use within two weeks.
